Vegan Matcha Ginger “Nice” Cream

There’s zero milk or cream in this refreshing, creamy warm weather treat that tastes like dessert but secretly includes a whole cup of spinach, plus bananas, dates and ginger. The sweet, zippy, palate-cleansing flavors make for a delicious end to a spicy meal. Enjoy!

Equipment:

  • High speed blender with a tamper, such as Vitamix

Ingredients:

  • 1 cup of spinach
  • 5 ripe bananas, frozen and broken into small pieces
  • ¼ cup pitted dates
  • 1 tsp vanilla extract
  • ½ tsp fresh ginger, minced
  • 1 tbsp matcha powder
  • 1/8 cup oat milk or other plant-based milk
  • Optional toppings: vegan chocolate chips, extra matcha powder

INSTRUCTIONS:

  1. Place all of the ingredients into your high-speed blender, in the order listed above.
  2. Secure the lid and place the tamper through the hole in the center of the lid.
  3. Turn the blender on and set to “frozen dessert” if you have a Vitamix, or “medium” on a regular blender.
  4. Press start and blend the mixture, using the taper to press the ingredients through the blender blades until a smooth ice-cream-like texture forms.
  5. Scoop into bowls, top as desired and serve (or freeze for up to a week in a freezer-safe container).
