Vegan Chocolate Mug Cake

Need an easy but delicious vegan, gluten-free dessert for Valentine’s Day? You can mix these fudgy chocolate cakes in standard 12-ounce coffee mugs, then top with vegan whipped cream or icing and festive sprinkles.

Equipment:
• 1 12-ounce, microwave-safe coffee mug
• Whisk
• Microwave
Ingredients:
¼ cup gluten-free flour, such as Bob’s Red Mill One-to-One Gluten-Free Baking Flour
2 tbsp cocoa powder
¼ tsp baking powder
2 Tbsp sugar
Pinch of salt
¼ cup plus 1 tbsp oat milk or other plant-based milk of choice
2 tbsp canola oil
1 tbsp vegan chocolate chips, such as Enjoy Life mini dark chocolate chips
Optional toppings:
Vegan whipped cream or icing
Vegan sprinkles
METHOD:
- Place gluten-free flour, cocoa powder, baking powder, sugar and salt into a 12-ounce coffee mug and whisk until well-combined.
- Add oat milk and canola oil and whisk again until smooth.
- Add vegan chocolate chips and stir until evenly distributed.
- Microwave for 2 minutes on high.
- Carefully remove and repeat process with however many mug cakes you are making (the cake should be firm and bounce back when lightly pressed).
- Allow to cool a bit, then top with vegan whipped cream or icing and sprinkles and enjoy!

This looks really good. Can I use almond flour instead?
