Vegan Chocolate Mug Cake

Need an easy but delicious vegan, gluten-free dessert for Valentine’s Day? You can mix these fudgy chocolate cakes in standard 12-ounce coffee mugs, then top with vegan whipped cream or icing and festive sprinkles.

Cook Time: 2 minutes
Total Time: 7 minutes

Equipment:

• 1 12-ounce, microwave-safe coffee mug
• Whisk
• Microwave

Ingredients:

  • ¼ cup gluten-free flour, such as Bob’s Red Mill One-to-One Gluten-Free Baking Flour

  • 2 tbsp cocoa powder

  • ¼ tsp baking powder

  • 2 Tbsp sugar

  • Pinch of salt

  • ¼ cup plus 1 tbsp oat milk or other plant-based milk of choice

  • 2 tbsp canola oil

  • 1 tbsp vegan chocolate chips, such as Enjoy Life mini dark chocolate chips

    Optional toppings:
    Vegan whipped cream or icing
    Vegan sprinkles

METHOD:

  1. Place gluten-free flour, cocoa powder, baking powder, sugar and salt into a 12-ounce coffee mug and whisk until well-combined.
  2. Add oat milk and canola oil and whisk again until smooth.
  3. Add vegan chocolate chips and stir until evenly distributed.
  4. Microwave for 2 minutes on high.
  5. Carefully remove and repeat process with however many mug cakes you are making (the cake should be firm and bounce back when lightly pressed).
  6. Allow to cool a bit, then top with vegan whipped cream or icing and sprinkles and enjoy!
