Vegan Beans and Greens

Beans and greens are vegan winter comfort food at its best: hearty, nutritious and satisfying, and featuring hearty kale and bright citrus. I like serving them with quinoa or rice for dinner on nights when my husband, Brad, who came up with this recipe, is doing the cooking.

Total time: 40
Servings: 5

EQUIPMENT:
  • Sharp knife
  • Cutting board
  • Large saute pan

INGREDIENTS:

  • ¼ cup olive oil, divided
  • 1 medium shallot, sliced
  • 3 garlic cloves, minced
  • 1 bushel of kale, de-stemmed and ripped into quarter-sized pieces
  • 1/2 lemon, juiced
  • Salt to taste
  • Red pepper flakes
  • 1 can of cannellini beans
  • 1 can of chickpeas
OPTIONAL GARNISH:
  • Shaved Violife Just Like Parmesan

INSTRUCTIONS:

  1. Heat pan to medium heat.
  2. Add half of olive oil.
  3. Add shallots and cook until they become translucent.
  4. Add garlic and saute until shallots and garlic begin to brown.
  5. Add cannellini beans and chickpeas and stir to combine, then cook, stirring every once in a while, until they begin to crisp up and turn brown.
