Vegan Beans and Greens

Beans and greens are vegan winter comfort food at its best: hearty, nutritious and satisfying, and featuring hearty kale and bright citrus. I like serving them with quinoa or rice for dinner on nights when my husband, Brad, who came up with this recipe, is doing the cooking.

EQUIPMENT:
- Sharp knife
- Cutting board
- Large saute pan
INGREDIENTS:
- ¼ cup olive oil, divided
- 1 medium shallot, sliced
- 3 garlic cloves, minced
- 1 bushel of kale, de-stemmed and ripped into quarter-sized pieces
- 1/2 lemon, juiced
- Salt to taste
- Red pepper flakes
- 1 can of cannellini beans
- 1 can of chickpeas
OPTIONAL GARNISH:
- Shaved Violife Just Like Parmesan
INSTRUCTIONS:
- Heat pan to medium heat.
- Add half of olive oil.
- Add shallots and cook until they become translucent.
- Add garlic and saute until shallots and garlic begin to brown.
- Add cannellini beans and chickpeas and stir to combine, then cook, stirring every once in a while, until they begin to crisp up and turn brown.
