Around the holidays, every meal feels like a celebration and what better way to kick off the party than with a vegan antipasto platter? This Festive Olive Wreath is almost too pretty to eat! It will surely be the talk of the table and add an elegant touch to any dinner.

Olives are super easy to work with and fit just about every diet out there. Keep it vegan with olives, artichokes and sweet pepper drops, or go vegetarian by including some fresh mozzarella pearls or cheese tortellini. Nuts, capers, piquant peppers, gherkins, marinated mushrooms — add whatever you fancy, or keep it simple with this four-ingredient Festive Olive Wreath appetizer. Serve with crackers for a creative spread even Martha Stewart could be proud of.

Festive Olive Wreath

Various types of olives, your choice

Sweet pepper drops

Marinated artichoke hearts

Lots of fresh rosemary sprigs

Crackers for serving

Directions

  1. On a large round dish or platter, loosely arrange rosemary sprigs in the shape of a circle.

  2. Add olives sporadically around the circle to “decorate” your rosemary wreath. Follow with artichoke hearts, sweet pepper drops, and any other ingredients you want to add.

  3. Fill center with crackers, or serve crackers on the side.
