Beat the Heat with Vegan Sunbutter Elvis Popsicles

The King’s favorite flavor combination–bananas, chocolate and peanut butter–inspired this fudgy, vegan, from-scratch popsicle, which substitutes sunflower seed butter for peanut butter. If you do not have a nut allergy, you can substitute in any nut butter that you’d like.

Prep time: 15 minutes
Freeze time: 8 hours
Total time: 8 hours, 15 minutes
Servings: 6
INGREDIENTS:
- 3 frozen bananas
- ½ cup sunflower seed butter
- ¼ cup plant-based milk (I used oat milk)
- ¼ cup honey or agave nectar
- ¼ cup unsweetened cocoa powder
- ¼ tsp salt
INSTRUCTIONS:
- Place all ingredients into a high-speed blender in the order listed.
- Secure lid and place plunger in the opening.
- Set blender to “puree,” then hit start, using the plunger to push the ingredients down into the blades.
- Allow blender to run until the mixture runs smoothly through the blades and there are no visible, large chunks of banana.
- Turn blender off, then scoop equal amounts of mixture into popsicle molds.
- Secure mold lids and sticks, then freeze for at least 8 hours.
- Enjoy!
