Beat the Heat with Vegan Sunbutter Elvis Popsicles

The King’s favorite flavor combination–bananas, chocolate and peanut butter–inspired this fudgy, vegan, from-scratch popsicle, which substitutes sunflower seed butter for peanut butter. If you do not have a nut allergy, you can substitute in any nut butter that you’d like.

Prep time: 15 minutes
Freeze time: 8 hours
Total time: 8 hours, 15 minutes
Servings: 6

INGREDIENTS:

  • 3 frozen bananas
  • ½ cup sunflower seed butter
  • ¼ cup plant-based milk (I used oat milk)
  • ¼ cup honey or agave nectar
  • ¼ cup unsweetened cocoa powder
  • ¼ tsp salt

INSTRUCTIONS:

  1. Place all ingredients into a high-speed blender in the order listed.
  2. Secure lid and place plunger in the opening.
  3. Set blender to “puree,” then hit start, using the plunger to push the ingredients down into the blades.
  4. Allow blender to run until the mixture runs smoothly through the blades and there are no visible, large chunks of banana.
  5. Turn blender off, then scoop equal amounts of mixture into popsicle molds.
  6. Secure mold lids and sticks, then freeze for at least 8 hours.
  7. Enjoy!
