Broccoli stalk is far from just scrap – it’s a versatile ingredient that can be transformed into countless delicious dishes you never thought possible! Mindfully crafted, these zucchini fritters with broccoli stalk are the perfect example of both flavor and sustainability.

Equipment

  • Large mixing bowl
  • Grater
  • Measuring cups/spoons
  • Large skillet

Ingredients

  • 2 broccoli stalks
  • 2 zucchini
  • 1 + 2/3 cup chickpea flour
  • 1/4 cup fresh cilantro chopped finely
  • 1/4 cup fresh parsley chopped finely
  • 2 limes, juice of
  • 3 garlic cloves, chopped finely
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 3/4 cup water
  • 1/8 cup avocado oil for frying

Instructions

  1. Wash and dry broccoli stalks and zucchini. Grate them into a large mixing bowl.
  2. Add chickpea flour, herbs, spices, lime juice, and water, and mix until thoroughly combined.
  3. Heat oil on stove. Form mixture into round, flat fritters.
  4. Place fritters into hot oil and pan fry on each side for approximately 10 minutes. Cover halfway through.
  5. Remove from pan, place on napkin to absorb excess oil, and allow to cool slightly. Garnish with additional herbs and enjoy with dairy-free sour cream.
